I so love to cook... especially from scratch. My family's breakfast favorite are buttermilk pancakes.

  My quickest go-to meal for my kids is pizza quesadillas. Two tortillas smeared with tomato paste, sprinkled with italian seasoning, some grated parmesan and pepperoni slices. some mozzarella if I have it, which I usually don't. I sandwich them together and throw it into a pam-sprayed pan, sprinkle outside with a little garlic salt, and then use a pizza cutter to slice into wedges. Just like a pizza, but no mess, and I don't have to make the crust. Takes fives minutes start to finish. My children just loved the novelty of it. Give it a try and let me know how it turned out!

Welcome mom2pete_luc! My kids are picky too! What I do if I make something they don't like... maybe pasta salad for example, I just save them some plain noodles. Everyone is happy!
