I am going to have an over abundace of yellow and green beans in a week and aside from freezing some, I am looking for some great recipes. Does anyone have any ideas they can share with us?

I grow green beans every year because they're so easy to grow. The kids like to pick them, too. My very favorite recipe for green beans is this one:

Italian Seasoned Green Beans

1 lb fresh green beans, cleaned
2-3 T olive oil
1 t oregano
1 t basil
1 clove minced garlic
salt and pepper to taste
OR
1 T Mrs. Dash Garlic and Herb in place of garlic, oregano and basil

Heat large skillet over medium-high heat. Add olive oil and garlic (or Mrs. Dash) and blanched green beans.

Saute until the beans are tender-crisp. Add oregano and basil and toss until combined well. Add salt and pepper and serve.

It's important to blanch the beans first or it will take too long for them to cook and the herbs and oil will begin to burn.

One more! I made this last year when I had a bumper crop of beans and wanted something a bit newer:

Angel Hair Carbonara with Green Beans

1/4 lb bacon
2 cloves garlic
2 T olive oil
1 lb angel hair pasta
1/2 lb fine green beans - cooked and drained
3 whole eggs - beaten
1 cup freshly grated Parmesan
salt to taste

Dice bacon and cook in a skillet with olive oil until browned. Add garlic and cook for several minutes on low heat until fragrant. Cook pasta until al dente - this takes 4-5 minutes with angel hair. Mix egg and cheese together well. Drain pasta and add egg mixture while pasta is still very hot. Toss quickly so eggs do not scramble. Add green beans and bacon mixture. Toss until well combined and serve!
