PUMPKIN CHOCOLATE CHIP COOKIES
(Just made them today and they are D-LICIOUS!!)
Ingredients:
Dry-
1 1/4 cup flour
2 tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon
1/2 tsp nutmeg
pinch of salt
Wet-
2 sticks butter (softened)
1 large whole egg
1 egg white
1/2 cup packed brown sugar
1 cup white sugar
1 cup canned pumpkin
1 tbs vanilla extract
*1/2 - 1 1/2 cup chocolate chips* (However Chocolately you like them!!! I don't like too many.)
Preheat the oven to 375
Mix the dry ingredients in a small bowl and set aside.
Beat the wet ingredients together in a large mixing bowl until smooth.
(After it's smooth, I whip it for an extra minute or two just to make sure cookies come out fluffy.)
Slowly fold in the dry ingredients, and stir until smooth and well mixed. About 2-3 min.
Add chocolate chips.
Spoon mixture onto ungreased cookie sheet.
Place cookies on middle oven rack.
Cook for about 10 minutes until edges touching cookie sheet are slightly brown.
