One thing that always makes me feel great are mashed potatoes. I love to make a garlic red mashed potato ... so simple! I wash the red potatoes and cook them with a few cloves of fresh garlic, drain and beat with butter, pinch of salt, and milk. Hmmm maybe I will make some for lunch today! What comfort foods do you enjoy?

From time to time I get a hunger a night. I keep no sugar no fat butterscotch pudding mix ready. I add skim or 2% milk, mix it and then put it in the freezer for 10 minutes. When its ice cold it tastes great, even if it's just a tiny bit frozen. I also have no-fat whipped cream avaiable. It's a good snack food, very few carbs, and really good. Jello also puts out vanilla and chocolate in the no sugar fat free area.

I find baked potatoes comforting. I also think homemade macaroni and cheese is great comfort food.

I totally agree, homemade mac and cheese has to be one of my favorite comfort foods.

It's probably not comfort food as the rest of the nation thinks of it, but I'm from San Diego, so one of my favorite comfort foods is a big bowl of homemade salsa and a big pile of chips.

I use fresh ingredients, and it's so simple: tomatoes, garlic, onions, jalapenos, and cilantro (not dried). So easy and a million times better than jarred.

Oh yes Photo-Drew I must agree ... and yes to the fresh cilantro! I like to add black beans and corn to my homemade salsas too!!
