Thanksgiving Planning

Whether your are hosting Thanksgiving at your home or spending it with others and need to bring a dish to share or a hostess gift, Thanksgiving involves planning. My extended family has a rotation of where the holiday is at and this year it is at my sister's house. I'll be bringing the desserts this year. What are your plans for the holiday? What's on the menu for you?

Last I heard, we will have Thanksgiving at my in-laws. We were asked to bring rolls and dessert. So, I am thinking about low-cal cherry cheesecake, an apple and pecan pie. I also want a fresh veggie platter, so I will add that to my to-bring list.

Those pies sound great! Not sure if you're planning to make or buy the rolls, but if you'd like a recipe for some, just let me know.

These honey-cheese rolls are a favorite in my house. I've never had a spare one left after a meal. I think you will like them.

Honey-Cheese Rolls

8 cups all-purpose flour
2 teaspoons salt
2 packages active dry yeast
3/4 cup butter
2 cups (8 ounces) of shredded cheddar cheese
1 & 1/2 cups milk
1/3 cup honey
3 eggs

In a large bowl, combine 6 cups of the flour, salt, and yeast; stir until well blended. In a medium saucepan, combine 1/2 cup of the butter, cheese, milk and honey. Cook over medium heat until a thermometer registers 130 degrees (this is important) Do not worry if your butter is not completely melted at this point. Add eggs and the cooked cheese mixture alternately to the dry ingredients you've previously mixed together. Mix until a soft dough forms. Gradually stire in the remaining 2 cups of flour. Turn dough onto a lightly floured surface and knead for 10 minutes or until dough becomes soft and elastic. Transfer to a large greased bowl. Melt remaining 1/4 cup butter over low heat. Brush top of dough with 1/2 of the melted butter and cover dough and let rise in a warm place until doubled in size.

Turn dough onto a lightly floured surface and punch down. Shape dough into 3-inch balls and place with sides touching in a greased 9-inch round cake pans. If necessary, remelt remaining butter. Brush tops of rolls with melted butter and cover. Let rise for about an hour, until doubled in size.

Preheat oven to 375 degrees. Bake 30-35 minutes or until golden brown.

This makes about 2 dozen rolls.
