Shepherd's Pie
FamilyHost_Annabelle - October 01, 2009
We're having our first days of "jacket weather" here in the northeast. I was outside raking leaves and was thinking about what to make for supper. It's going to be Shepherd's Pie, for sure! That will chase the chill from the house and warm us up from the inside out. Everyone has their own version of Shepherd's Pie, and my favorite is below. Let's share our favorite recipes and add to our collections!

Shepherd's Pie Recipe

Ingredients
3lbs ground round beef
2 onions chopped
2 cups corn frozen corn, thawed
3-4 lbs potatoes
2 sticks butter
1 cup beef broth
1 teaspoon Worcestershire sauce
Salt, pepper, other seasonings of choice

Directions
Peel and quarter potatoes, boil in salted water until tender. While the potatoes are cooking, melt 1 stick butter in large frying pan. Sauté onions in butter over medium heat until tender. Add corn. Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist. Mash potatoes in bowl with remainder of butter, season to taste. Place beef, corn and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown. Cook in 400 degree oven for 30 minutes until bubbling and brown.

Oh I have not made this in ages ... this is how I make it. I cook the ground beef with onion, drain and put into a baking dish. Next I put on some frozen corn and a can of creamed corn.. I top it with mashed potatoes (sometimes I use instant and sometimes I whip my own), Lightly sprinkle with paprika and bake. I agree Annabelle, now is a great time to make it!

I also use ground turkey, I topped it with cheese for the first time a few weeks ago and the family didn't seem to like it as much! Oh well guess I have to stick to the traditional way. I also add frozen peas to mine that way we have a green veggie in there too.

Sounds delish! My daughter makes her mashed potatoes and then mixes in beaten egg, shredded cheddar and onion power. It makes a nice golden crust.
