Guacamole

We love guacamole. Aztec in origin, guacamole was originally made by mashing ripe avocados with a mortar and pestle and adding tomatoes and salt. In one of the Aztec dialects, guacamole means "avocado sauce" which describes this delectable treat perfectly. Like spaghetti sauce, everyone has his or her own recipe, but common ingredients seem to include avocados, tomatoes, salt and lime juice. My favorite recipe is below, which I love to serve it with fresh tortilla chips hot from the fryer. Let's share our recipes and serving ideas here!

Ingredients
4 ripe avocados
1 red onion, minced (about 1 cup)
1 serrano or jalapeno pepper, stem and seeds removed, minced
1/4 cup cilantro leaves, finely chopped
2 tablespoon of fresh lime or lemon juice
1 teaspoon coarse salt
1/4 teaspoon freshly grated black pepper
1 ripe tomato, seeds and pulp removed, chopped

Directions
Cut avocados in half, remove pits, scoop out avacado from the peel, put in a mixing bowl. Using a fork, mash the avocado, then add chopped onion, cilantro, lime or lemon juice, salt and pepper and mash some more. Since chili peppers vary in their heat, start with half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers (use gloves or wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours.) Keep the tomatoes separate until ready to serve. Cover with plastic wrap directly on the surface of the guacamole to prevent it from turning brown. Refrigerate until ready to use. Just before serving, add the chopped tomato to the guacamole and mix. Serves 6-8.

How could you possibly have known that I have been on the lookout for a guacamole recipe? I've never found a good one and have been on the hunt. Thanks. I will give this a try.

Enjoy, kayceecat! I made a batch last night when some neighbors dropped over. It's really quick and easy. The hardest thing is chilling it, because everyone sees me making it and out come the chips! Before you know it, there's none left!
