  I made the best apple pancakes over the weekend... I had made some pancake batter, added a bit of vanilla, sugar, nutmeg, and cinnamon... then one grated apple! Served with pure Vermont maple syrup! I can't wait to make them again this weekend!!

That sounds delicious, Jennyboots! I bet that would make great waffles as well, with whipped cream and chopped walnuts!

  My husband makes these killer breakfast quesadillas! Scrabbled eggs, cheese, bacon, sausage, peppers and onions...you name it it can go inside. My FAVORITE is scrambled eggs,mushrooms, tomatoes,cheese,broccoli and ham. Melt some cheese on top and I prefer rye or pumpernickel toast. Heart attack on a plate but oh so yummy....I just told him last night that's what I want for breakfast on Saturday...LOL

That sounds like a delicious combinations! Down the road here's a little breakfast shop that serves "Breakfast Qs" that people order the same way they order omelets. My favorite combinations is scrambled eggs, feta cheese, onions, spinach, garlic and black pepper. They're so big that I usually have enough leftover for two more breakfasts!

  Our family favorite is Crepes! My husband makes the best crepes in the world. I will have to post the recipe in a sep. post because he isn't home and the recipe is in his head! However, the cream cheese filling from a dessert recipe is what truly makes the crepes so yummy. We mix anything that we put in our crepes with the cream cheese! Here is a picture of Kev flipping the crepe!

Oh I wish, but alas, I'd be the only one to eat them. Noone not even my oldest likes crepes in my house. Haven't given any to the baby, maybe if we ever go out for breakfast again!

Basic Crepe Recipe
1 Cup Flour
1 Cup Milk
2 Eggs
1/4 Cup Brown Sugar
1 tsp Vanilla
1/8 tsp Cinammon
2 Tblsp melted butter
Mix above ingredients in bowl, melt butter in crepe pan, pour into mixture, stir well.

Use 1/4 cup batter per crepe, pour into crepe pan, twirl the pan to coat the pan with batter and make a paper thin crepe. cook on med heat, when cooked, Flip.

Cream Cheese Crepe Filling

1 8 oz pkg Cream Cheese (light or less fat if you want)
1/4 Cup powdered Sugar ( reg sugar will work too)
1-2 Tblsp milk
1-2 tsp vanilla (clear looks nice!)

Soften cream cheese, mix in sugar and milk, then mix in vanilla. Clear Mexican vanilla keeps the mixture white, reg vanilla turns the mixtures brown! Add more milk to make it easier to stir if needed, add more sugar or vanilla to taste for your family.

For crepes put inside the center of crepe, my kids spread it all over the crepe. Then add sausage, jelly, scrambled eggs, fresh or frozen fruit, what ever you like to your crepe. You can top with whipped cream. Makes a yummy breakfast.

The crepes taste good by themselves with just cream cheese mix! I can't imagine kids not liking these, they are just think pancakes!!

Jennyboots, I have an easy recipe for Apple Syrup. Actually, we call it "Apply Syrup" because that's what my oldest used to call it when she was little. This makes about a pint of syrup.

Ingredients:
1 cup sugar
2 tablespoons cornstarch
1/4 teaspoon apple pie spice
2 cups apple cider
2 tablespoons lemon juice
6 tablespoons butter

Directions:
Mix sugar, cornstarch, spice, juices, and butter in a saucepan. Bring to a boil, and then reduce the heat and simmer until syrup is thickened. Refrigerate leftovers. This recipe can be halved.

Thank you for the apple syrup recipe. I'm going to give it a try. Any idea how much fat is in this? My dad would love it, but, I have to watch what he eats and that's difficult without introducing something he'll love and then having to take it away....do you use real butter or a butter substitute? I know I can use Splenda for the sugar,just want to make sure the butter can be changed or if it ruins it.
