We lived in the second floor apartment above my grandmother's house when we first moved from the west coast to the east. Nana's kitchen was right below my bedroom, and ever Sunday morning, the smells from her kitchen would wake me out of a sound sleep. The one smell I remember best (probably because I keep the memory alive by making this all the time) was her Breakfast Bake. This juicy casserole is a cross between corn bread and polenta with a sweet maple flavor, and contains all the flavors of breakfast: ham, bacon, sausages, french toast and maple syrup. The recipe is below.

we are usually so busy on the weekends but last year on christmas & new years we made a french toast casserole and this year i want to make another one this time its called eggs & bacon pie..looks so good and i know they will all eat it 1 can (7.5 oz.) refrigerated buttermilk biscuits 2 Tbsp. butter or margarine 6 eggs, lightly beaten 1/3 cup milk 1/4 tsp. each salt and pepper 3 oz. PHILADELPHIA Cream Cheese, cubed 6 slices OSCAR MAYER Bacon, crisply cooked, crumbled SEPARATE biscuits. Arrange on bottom and up side of 9-inch pie plate; press together to form crust. Bake as directed on package. MELT butter in medium skillet on low heat. Beat eggs, milk and seasonings with wire whisk until well blended; pour into skillet. Cook until eggs begin to set, stirring occasionally. Add cream cheese; cook until cream cheese is melted and eggs are set, stirring occasionally. SPOON into crust; sprinkle with bacon.

I make one that is pretty healthy. It includes eggs, which are free range and brown, turkey sausage crumbled, shredded reduced fat cheese, red peppers and onion. I call it a scramble, since it's made in a skillet and just mixed together to cook.

I just found another recipe! Here it is...
Sausage Hash Brown Casserole
1 lb. sausage patties
10 large eggs, slightly beaten
3/4 cup milk
4 tablespoons melted butter
24 oz. pkg. hash browns
8 oz. shredded cheddar cheese
2 teaspoons onion powderPreheat oven to 350°F. Break up sausage meat and layer meat on bottom of a well buttered 9" x 13" pan. Add milk and melted butter to beaten eggs and pour over sausage. Add hash browns and top with shredded cheese. Bake for one hour.

I did some exploring and found a couple of scrumptious looking recipes at http://family.go.com/food/article-sk-189614-dessert-for-breakfast-t/. Check out the recipe for Bread Pudding... milk, bread, eggs, raisins... sounds like a balanced breakfast to me! Enjoy :)
