Breakfast Casseroles

We lived in the second floor apartment above my grandmother's house when we first moved from the west coast to the east. Nana's kitchen was right below my bedroom, and ever Sunday morning, the smells from her kitchen would wake me out of a sound sleep. The one smell I remember best (probably because I keep the memory alive by making this all the time) was her Breakfast Bake. This juicy casserole is a cross between corn bread and polenta with a sweet maple flavor, and contains all the flavors of breakfast: ham, bacon, sausages, french toast and maple syrup. The recipe is below.

Nana's Breakfast Bake

Ingredients
4 eggs, beaten
2 15 ounce cans cream-style corn
1 pint sour cream
1/2 cup real maple syrup
1 stick butter, melted
1 cup shredded Cheddar cheese
2 8.5 ounce packages dry corn muffin mix

1/2 lb sausage, cooked and crumbled
1/2 lb bacon, cooked and crumbled
1 cup chopped prosciutto or cooked ham

Directions
Preheat oven to 350 F. Generously grease a large casserole dish (should hold at least 4 quarts). In a large mixing bowl, combine eggs, cream style corn, sour cream, maple syrup and melted butter. Stir in the corn muffin mix until just moistened. Fold in cooked meats and pour into greased casserole dish. Bake in a preheated 350 F oven for 75 minutes or until an inserted knife comes out clean and the top is golden. Let stand 5 minutes before serving.

I love breakfasts, and those recipes sound GREAT. But I usually have oatmeal. I'm on a diabetic diet, so breakfast is generally confined to oatmel or Special K with a banana, both of which I like.

  that sounds tasty... I get a potato and shread it up cook diced onion and bacon and drained spinach and pour a few eggs lightly beating and top with cheese let is set up on a med heat then transfer to a 350 oven to let it get fluffy and brown up mmm mm

Cheesy Broccoli Strata

12 slices day old bread, trimmed and cubed (I use scala)
1 pack (10 oz.) frozen, chopped broccoli, thawed & drained
16 oz. shredded cheddar cheese
4 eggs, slightly beaten
2 1/4 cup milk
1 tablespoon Dijon mustard
1 teaspoon onion powder
1/2 teaspoon garlic powder
Paprika
Medium tomato cut into wedges

Layer the bread cubes, broccoli, and 1/2 of the cheese in a generously buttered 9" x 13" glass baking dish. Beat together eggs, milk, mustard and spices. Pour over layers. Refrigerate, covered, for several hours or overnight. Sprinkle with paprika. Bake, uncovered, at 350 degrees for 40 minutes. Add remaining cheese and tomato wedges; bake until knife inserted in middle comes out clean, about 10 to 15 minutes longer. Remove from oven, let cool for 10 minutes and cut in squares.

we are usually so busy on the weekends but last year on christmas & new years we made a french toast casserole and this year i want to make another one this time its called eggs & bacon pie..looks so good and i know they will all eat it
1 can (7.5 oz.) refrigerated buttermilk biscuits
2 Tbsp. butter or margarine
6 eggs, lightly beaten
1/3 cup milk
1/4 tsp. each salt and pepper
3 oz. PHILADELPHIA Cream Cheese, cubed 6 slices
OSCAR MAYER Bacon, crisply cooked, crumbled

SEPARATE biscuits. Arrange on bottom and up side of 9-inch pie plate; press together to form crust. Bake as directed on package.

MELT butter in medium skillet on low heat. Beat eggs, milk and seasonings with wire whisk until well blended; pour into skillet. Cook until eggs begin to set, stirring occasionally. Add cream cheese; cook until cream cheese is melted and eggs are set, stirring occasionally.

SPOON into crust; sprinkle with bacon.

I make one that is pretty healthy. It includes eggs, which are free range and brown, turkey sausage crumbled, shredded reduced fat cheese, red peppers and onion. I call it a scramble, since it's made in a skillet and just mixed together to cook.
