Hot off the grill!

Summer is my favorite season for a lot of reason, one of which is that I have a chance to get out of the kitchen and let hubby and the chef do their thing at the grill. The deal is that I prep everything (and clean up afterward) and they do all the cooking. I used Catherine Newman's Double-Delicious Grilled Chicken recipe (see her blog at http://family.go.com/parent-to-parent/blogs/catherine-newman-blog/double-delicious-grilled-chicken-830230/) with chicken, pork and tofu (marinated and cooked separately), and all were delish!

Just for the sake of having a variety of grilling recipes at our disposal, I thought it might be nice if we share them here. So dig through your recipe box, and show us what you like to grill. Photos would be great!

Here's a recipe from my collection.

Grilled Veggies

Ingredients for marinade
1 cup olive oil
1/3 cup fresh lemon juice
2 teaspoons salt
1 teaspoon freshly-ground black pepper
1 tablespoon dried Italian seasoning
4 cloves garlic, mashed (or 2 tablespoons jarred minced garlic)

Vegetable
8 medium-size red onions, quartered
4 medium-size green zucchini, cut into 1-inch pieces
4 medium-size yellow summer squash, cut into 1-inch pieces
1 lb mushrooms, stems removed
2 red bell peppers, seeded and cut into 1-inch pieces
1 pound feta cheese, crumbled, for garnish
bamboo kabob skewers, soaked in water for at least an hour (so they won't burn on the grill)

Place marinade ingredients in a 2 gallon zip top bag. Add vegetables and turn bag over to coat the vegetables. Marinate in the refrigerator 1 to 4 hours. When ready to cook, remove vegetables from marinade and thread onto bamboo skewers. Leave a little space between the vegetables for air to circulate. Grill until all vegetables are tender, about 20 minutes. Remove from skewers, garnish with crumbled feta and serve warm. Leftovers are great the next day on a salad.

  The farm stand down the road has Sugar Queen this year. I already put in my order (getting four dozen!) and will get my sister to prep them! She doesn't know it yet! LOL

does anyone here know how to freeze corn on the cob it usually dont last but its so good I would like to buy extra and freeze and have later on

We grill year round, my fave are ribs! I like to grill them and then throw them in a crockpot of bbq sauce and let them slow cook all day! The combo of the grill and slow cooking is out of this worlds!
