Catherine Newman has shared many recipes which have become family favorites, and her Crunchy Oven Fries recipe is no exception. In anticipation of creating this topic, I made a batch of these delightful treats doubling the recipe so I'd have leftovers. Not only are these fries delicious right out of the oven, they're wonderful reheated as well (I just had some for breakfast as a side to my egg white/broccoli omelet). I highly recommend trying them.

I love these fried sweet potatoes:

* 6 sweet potatoes, peeled
* 1/2 cup butter
* 2 cups packed light brown sugar

1. Bring a large pot of water to a boil. Add peeled sweet potatoes, and boil for about 4 minutes. Remove from water, and cut into 1/2 inch slices.

2. Melt butter in a large frying pan over medium heat. Stir in brown sugar until dissolved, adding more butter if necessary. Add sweet potatoes, and fry until golden brown and fork tender, turning occasionally. Serve hot.

I can't wait to try these! What I have made at home before is where I thinly slice potatoes and lay them on a sookie sheet that has been sprayed with non-stick spray. I then season them with a little cajun seasoning and I flip them once during the cooking process and add a bit more seasoning. Bake them in the oven at 400 degrees until they are getting crispy.

Sweet potatoes are one of my favorites. I'll definitely add these to my list of things to try.
