Any recipes to share?
mom2A-J - October 22, 2009
I am wanting to start baking a bit with my kids. As I've mentioned before, baking is not my forte. Any fun recipes out there? Something simple please, lol!

Hi mom2A-J,

Have you checked out the great how-to videos that are on the Family Fun site? There are some really fun recipe ones that would be good for cooking with kids. Here's a link to the main recipe video page. http://familyfun.go.com/how-to-videos/channel-recipe-how-tos/r/1/ I'll check out my personal recipe collection to see what "tried & true" base cake/cupcake batter recipes are there to share with you.

Here's a basic yellow cupcake batter that will stand up to being filled and decorated.

1 1/2 cups all-purpose flour
2 tsp. baking powder
1 tsp. salt
1 cup sugar
2 eggs
1 stick (1/2 cup) unsalted butter at room temperature
1 teaspoon extract (I prefer vanialla, but you can use almond extract or other flavor of your choice)
1/2 cup milk

Preheat oven to 350 degrees. Mix all the dry ingredients together and set them aside. Cream the butter and sugar until fluffy. One at a time add the eggs, mixing well after each is added. Add the extract. Alternate adding some of the flour and milk until you have all the flour and milk into the batter. Beat until batter is smooth.

Spoon the batter into cupcake liners, filling each one about 2/3 full. Bake for 20-25 minutes. Toothpick inserted into center will come out clean when they are done. Remove from oven and cool.

If baking itsn't your forte have you thought about a fake out like the store bought sugar cookie dough you can do all kinds of things with that.. and my two most important tips I learned from my mom is to use eggs at room temp, mix you wet first and slowly work in your dry, and when making cookie dough after its mixed up cover it and stick it in the fridge for a about 30 mins I found a ton of good recipes on www.tablespoon.com
