Love this easy chili recipe when time is short:
1 lb roll sausage
1 cup diced onion
3-4 tsp chili powder
1 tsp ground cumin
¾ tsp garlic powder
1 can (15oz) tomato sauce
1 can (15oz) light red kidney beans (incl. liquid)
¾ cup waterBrown and crumble sausage. Add onions and cook until tender and sausage is no longer pink. Carefully drain off excess drippings. Add seasonings and blend with sausage. Add remaining ingredients and simmer over medium-low heat 20-25 minutes.

Do it yourself pizza is great, too. Just grab a pack of premade, precooked personal or regular crusts, put a bit of pizza sauce on them (sometimes it comes with the crust!) and if you're doing the personal let everyone make their own. Pour on the cheese and put on some toppings and pop them in the oven until the cheese is all melted. It's just too easy and clean up is next to nothing!

You just can't go wrong with quesadillas.
Just flop a tortilla in a pan (no butter or oil) on medium heat.
Sprinkle shredded cheese over it.
If you have leftover chicken (pre-cooked), shred it up and sprinkle that on one side of the tortilla.
If your kids like any veggies, you can add those over the chicken as long as they're cut thin (I like using a few slices of zucchini)1. Once everything's on the tortilla (make sure you didn't overload it), use a spatula to fold the side with just cheese over the other side.
2. Cook for a couple minutes on each side until the cheese is all melty and good.
3. Enjoy! (Be careful it's not too hot when serving to little ones)
