Triple Chocolate Toffee Truffles

Ingredients
6 ounces mascarapone cheese (cream cheese can be substituted)
3/4 cup toffee bits, divided
4 tsp. instant coffee crystals
1 tsp. water
1 1/2 cups milk chocolate, chopped
2 Tbsp. + 1 1/2 tsp. shortening
1/4 cup. white chocolate, chopped
Directions
Melt semisweet chocolate in microwave at 20 to 30 second intervals, stirring after each interval until melted. Remove from heat and add mascarapone cheese and 1/2 cup toffee. Stir unti smooth.
Stir together coffee crystals and water. Add to chocolate mixture, stirring until smooth. Cover and chill about 2 hours or until firm.
Use two spoons to shape the mixture into 1 inch balls. Place on a waxed paper lined baking sheet. Cover and chill for 1 to 2 hours.
Melt milk chocolate and 2 Tbsp. shortening at 2 to 30 second intervals stirring after each interval. Allow to cool to room temperature.
Use a fork to dip truffles into milk chocolat, allowing excess to drip back into bowl. Return to baking sheet and chill for about 30 minutes.
Melt white chocolate and 1 1/2 tsp. shortening in 20 second intervals. Stir after each interval. Drizzle over tops of truffles. Sprinkle with remaining toffee.
