Chocolate Chunk Buttered-Pecan Cookies

Ingredients
1/2 c. shortening
2 c. pecan halves, chopped fine to medium
1 -1/2 c. granulated sugar
2-1/2 c. all-purpose flour
1/2 c. unsweetened, Dutch processed cocoa powder
1/2 tsp. baking soda
1/2 tsp. fine sea salt
3 large eggs, room temperature
1 T. pure vanilla extract
1 (10-oz.) pkg. dark chocolate chunks
Directions
Preheat oven to 400 degrees.
In a large shallow non-stick sauté pan melt 2 tbsps. butter over medium-low heat. Add pecans and sauté 4 6 minutes or until nuts are lightly toasted and fragrant. Set aside.
In a mixing bowl cream together remaining butter, shortening and granulated sugar; beating on medium speed for 2 minutes. Sift together flour, cocoa, baking soda and salt. Add alternately to creamed mixture with eggs, beating well after each addition. Add vanilla and mix throughout. Add pecans and dark chocolate chunks, beating on low speed until mixed throughout.
Take approximately 2 tbsps. of dough and form into a ball with your hands. Flatten into rounds approximately 1/2-inch thick. Place on silpat lined (or parchment paper lined) baking sheets at least 2-inches apart. Bake in a preheated 400 degree oven for 14 - 16 minutes, or until baked throughout. Remove from oven. Let cool 5 minutes. Remove cookies to a wire rack to cool completely.
Makes: Approx. 20 cookies
