Vanilla Snowballs

My kids are probably like every other kid on the planet; they want cookies year-round regardless of the weather. I'm not a 'cookie mom'. I really dislike making cookies, yet I do it often because the kids love them. I like cookies too, but baking them seems to drive me completely batty. I don't mind the unbaked kind so much because there's no waiting at the oven door for 8-10 minutes before heading back to the counter to drop or roll more. There is no other time of year that I detest it more than in the summer. The heat factor and lack of air conditioning make it the most unbearable task I can think of. I search yearly for no-cook and no-bake cookie recipes. There are plenty of old stand-bys, but I like to have something different once in awhile.

These aren't exactly cookies, but they are no-bake and so easy that I don't mind this one bit. The kids ate them so quickly that I had to hide the remainder. I'll admit, I was tempted to have more than one myself. These are pretty, too, making them perfect to give as gifts or serve at birthday parties. They're sturdy as well and would pack easily for a camping trip or picnic. Vary the cereal or add a half cup of nuts, if you like.

Vanilla Snowballs

Hands-On Time: 15 minutes
Ready In: 30-45 minutes
Serves: 12 balls

Ingredients:

     1  12 ounce package white chocolate chips
     4 cups popped popcron
     2 cups fruit flavored O's cereal

Directions:

     1. Microwave the chocolate chips in a bowl for a minute or two.
     2. Put popcorn and cereal in a large bowl and mix together.
     3. Pour melted chocolate over cereal and popcorn and stir until coated well.
     4. Drop by 1/3 cup into cupcake liners.
     5. Let stand for 20 to 30 minutes until hardened.
