Easy Easter Morning Fare

Easter morning is busy; second only to Christmas morning for us. Everyone needs to eat, though and not just candy from their baskets. Breakfast needs to be fast, filling and delicious. This menu makes my morning easy since it can be prepared the night before and heated while everyone is checking out what the bunny brought.
Strata
Serves 8 - 12
(here it serves 8)
12 slices bread with or without crust
2c. shredded cheese (we like cheddar or Monterey Jack)
6 eggs, beaten
1c. milk
Preheat oven to 350 F.
Layer 6 slices of bread on the bottom of a large greased baking
dish -- 9x13 works best for this.
Top with cheese. Layer remaining slices of bread over cheese.
Mix eggs and milk well. Season mixture if desired with
onion powder, dry mustard, paprika etc.
Pour egg mixture over all and cover tightly with foil.
Refrigerate overnight or at least 2 hrs.
Bake covered for 30 min. Remove foil and bake another
15 minutes until the top is browned.
Let sit for 15-20 minutes before cutting.
Mock Mimosas
Makes 6
3 cups orange juice
3 cups gingerale
Combine and refrigerate until well chilled.
