Deli Roast Chickens

Deli roast chickens are available almost everywhere nowadays. I pass them at the deli counter and then again in heated bins at the check-out at my favorite store. These are good for so many things and a quick alternative for nights when everything seems to be running behind.
Chicken quesadillas, classic chicken salad, a fast add to a casserole; the list goes on. I think they're a real lifesaver when the weather is warm. There's no oven or stove to heat and the cooking is already done; just pop them out of the container and you're on!
This is one of the tastiest ideas I have for these birds.
Fruited Chicken Salad
1 deli roast chicken-meat only-shredded
6 cups salad greens-a blend works well
1 mango, peeled and diced
1 kiwifruit, peeled, halved and sliced
1 cup hulled and sliced strawberries
1/2 cup sliced red onion
1/2 cup each red and yellow bell pepper
1 cup raspberry vinaigrette or other fruit blend salad dressing
Toss greens, fruits, onion and bell pepper in a large bowl and divide among 6 plates.
Top with shredded chicken and drizzle with salad dressing. Serves 6
Change things up by using halved grapes, diced apples, sliced peaches or plums, and add your favorite nuts as a garnish.
