My favorite summertime pie filling is light vanilla ice cream mixed with equal parts peanut butter and honey! Not too rich, cool and refreshing.

These look amazing and so easy. I'm thinking even I could make one! I'm also a huge fan of key lime pie for summer.

Are you kidding me? I'm allowed to have a peanut butter crispy crust? Wow. I'd definitely do that with the vanilla ice cream filling...and perhaps find a way to substitute chocolate for fresh fruit (or do both chocolate AND bananas!).

As always, they look yummy, yummy, yummy! :D I'll have to adapt to GF in some of them, but sure looks worth the gamble! :D
