Pie is perfect for the fall and winter months, right? Wrong! Pie is awesome in the summertime, especially the no-bake and freezer types. My own preference is for the creamy chocolate or fruit flavored versions, but several of my family really like the all-out-berry types. I admit I'm not a huge berry fan, especially if they're cooked. I like just plain old ripe berries like raspberries.
There are several types of no-bake pies that are so easy to throw together. The only real time needed is setting or freezing time. With these recipes you can mix and match pies to pie crusts, fillings to fruits, and never have the same pie twice this summer.
PIE CRUSTS:
Crunchy Peanut Butter Crust
2 c krisp rice cereal
1/2 c creamy peanut butter
1/4 c light corn syrup
Mix peanut butter and corn syrup until well blended. Add cereal and stir until combined.
Press into the bottom and sides of a 9 inch pie pan using a plastic bag over your hand to avoid sticking.
Chocolate Wafer Crust
30 chocolate wafer cookies - crushed; about 2 cups
6 Tablespoons butter or margarine - melted
Combine until all crumbs are moist.
Press into the bottom and sides of a 9 inch pie pan.
Coconut Crust
2 c flake coconut
1/3 c butter or margarine
Cook together in a large skillet until coconut starts to brown.
Press into the bottom and sides of a 9 inch pie plate.
Graham Cracker Crust
1 cup graham cracker crumbs
1/4 cup butter, melted
Combine and press into bottom and sides of a 9 inch pie plate.
Macaroon Crust
1 1/2 cups macaroons - crumbed in a food processor
1/4 c butter - melted
Combine well and press into the bottom and sides of a 9 inch pie plate.
Chill until set.
Vanilla Wafer Crust
1 1/2 cups vanilla wafer crumbs
1/3 cup butter
Combine together thoroughly.
Press into bottom and sides of a 9 inch pie plate.
Chill until set.
Any Flavor Creamsicle Pie
1 prepared 9-inch pie crust
1-1/2 c cold milk
2 small boxes instant vanilla pudding mix
1 small envelope unsweetened drink mix - any flavor
12 oz container non-dairy whipped topping - thawedPour the cold milk into a large bowl. Add the pudding mix and beat with a
wire whisk for 1 minute. Add the drink mix powder and whisk until combined.
Add the whipped topping and fold in with the whisk.
Pour into the prepared crust and freeze for 2 hours.Serves 8
Any Fruit Cheese-Bottom Pie
1 prepared 9 inch pie crust
1 (8 oz.) package cream cheese
1 (14 oz.) can sweetened condensed milk
1/4 cup lemon juice
1 teaspoon vanilla extract
1 (21 oz.) can pie filling OR 2 cups fresh fruitBeat cheese until light and gradually add condensed milk.
Add lemon juice and vanilla and stir until smooth.
Pour into crust and chill for 3 hours or until set. Top with pie filling or fruit.Serves 8
Any Flavor Fluffy Fruit and Ice Cream Pie
1 prepared 9 inch pie crust
1 package flavored gelatin
1 1/4 cups boiling water
1 pint ice cream - any flavor
1 to 1 1/2 cups fruit - canned or freshDissolve gelatin in boiling water. Add ice cream in small amounts, stirring all the while, until melted.
Chill until thick, but not set (about 30 minutes). Fold in fruit and pour out into pie shell. Freeze until firm.Serves 8
