Top pita halves with chicken, barbecue sauce and cheddar cheese for a quick busy-night dinner that will satisfy everyone. Add vegetable dippers and you're good to go with minimal fuss. The cost per serving (about $1.20) makes this easy on the wallet as well.

Chicken BBQ Cheddar Pitas

Hands-On Time: 5 minutes
Ready In: 15 minutes
Serves: 6  Two pita halves per person

Ingredients:

6 pitas - 6 inch size (I use whole wheat)
1 pound shredded chicken
1 cup shredded cheddar cheese
3/4 to 1 cup barbecue sauce
1/4 cup sliced green onion*

Directions:

1. Preheat oven to 400 degrees F.
2. Using kitchen shears, cut pitas clear around the edge, making two pita halves.
3. Top each pita half with chicken, barbecue sauce, cheese and green onion.
4. Set pitas on a cookie sheet and bake for 8 to 10 minutes or until cheese is melted and bubbly.

*Note: The green onions can be omitted for those who aren't fans.
