Mixed Berry Cobbler

Cobbler usually evokes thoughts of cooler days when the desire for comfort food runs high. When the cobbler is made with berries, though, it's all Springtime to me. This cobbler is little on the 'cheating' side, using canned biscuits in lieu of homemade dough and frozen berries replacing the usual fresh. This will be our Father's Day dessert, and just like any other day here, time is of the essence, so streamlining the preparation was key. My husband is just crazy about this and all but one of the kids consumed it like there was no tomorrow. I like it for the intense flavor from so few ingredients. Whipped cream or vanilla ice cream completes this dish well.
Mixed Berry Cobbler

Ready In: 1 hour
Servings: 6
Ingredients:
    Filling:
    6 cups frozen mixed berries - thawed
    1/2 to 3/4 cup sugar
    1 cinnamon stick or 1/2 teaspoon ground cinnamon
    1/4 teaspoon freshly grated nutmeg or 1/2 teaspoon ground
    juice of one orange
    Topping:
    6 extra-large canned biscuits
    2 tablespoons sugar
    1/8 teaspoon each ground cinnamon and nutmeg
Directions:
1. Heat oven to 375 degrees F and grease a 10 inch square or round baking pan.
2. Combine berries with sugar, cinnamon, nutmeg and orange juice in a heavy saucepan.
3. Heat over a low flame, stirring often, until bubbling and fragrant.
4. Remove cinnamon stick, if used, and pour berries into prepared baking pan.
5. Lay biscuits on top of filling, leaving a 1/2 inch space between each and placing one in the center.
6. Combine 2 tablespoons sugar with cinnamon and nutmeg and sprinkle over biscuits.
7. Bake, uncovered, for 20 - 25 minutes, or until biscuits are golden brown and berries are bubbling.
8. Let stand for 20 - 30 minutes before serving.
Notes:
I used a mixture of raspberries, blackberries and blueberries, although any berry can be used as long as it does not contain a pit.
You can thicken the berries, if you feel it is necessary, with a mixture of cornstarch and water.
Add a teaspoon of vanilla or almond extract for a different variation.
