Spinach for Everyone!

In my quest for everyone to regale in the advantages of that brain food -- spinach -- I've come up with an appetizer, called "Popeye's Pride," that almost qualifies as a vegetable side. And, with flavors added that temper the spinach, I've had luck with kids loving it.

For this dish, defrost a 16 oz. bag of chopped spinach. Drain the spinach and -- using paper towels or a clean dish cloth -- press as much water out of it as possible. In a medium size bowl, toss the spinach with 3/4 cup of low-fat mayonnaise, 1 cup of grated parmesan cheese, and 1/2 of a large, sweet onion that's been diced. (I also sometimes add in a couple of chopped artichoke hearts for a bit of depth). Then bake the mixture in an 8-inch by 8-inch glass dish that's been greased with extra-virgin olive oil and bake at 375 degrees for 40 minutes, or until the spinach is bubbling around the edges.

Serve with no-salt tortilla chips or multi-grain crackers and -- as long as the kids don't scrape off the dip just to eat the chip -- they're getting a good dose of spinach.
