Egging on St. Patrick's Day

A favorite St. Patrick's Day breakfast for us takes a tip from Dr. Seuss' beloved "Green Eggs and Ham." Gather 'round and read the story on St. Patrick's Eve. Then, on St. Patrick's Day, have the kids pitch in and help make the breakfast with their own variation of green eggs. The green eggs are created with little more than a tad of green food dye (found on your grocery store's spice aisle). Melt a tablespoon of unsalted butter in a sauté pan, and then squeeze a couple of drops into it. You can then fry the eggs in the pan for a great green tint.

Alternately, for scrambled eggs, you can whisk a few green dye drops while beating the eggs and before pouring them into the pan.

If you want a completely natural route -- though, in fair warning, your shade of green may not be truly green -- serve fried or scrambled eggs with a spoonful of a purple hued jam or jelly (such as boysenberry, blueberry, or grape). Then, let the kids turn their plate into a palette, mushing the eggs and jam together.

Sure, it might not be exactly Irish... but it definitely shares St. Patty's day traits of green, fun and family.
