Cake-like Sconeage

While I can thank my Dad for his culinary expertise and teaching skills (that I posted about last time), I increasingly realize with each cross-country visit from my Mom that my love for cake came from her.

I have to point out that both Mom and Dad -- with their intense appreciation for food -- never let that undermine their need to be physically fit and ultra stylish. To their four kids (and our spouses, kids, and assorted friends), they're exemplary examples of living well... and healthily so.

But back to cake. Since Mom arrived, I find myself wanting to complete each meal with a cake confection (and this even goes for breakfast). We greeted her arrival with squares of Red Velvet cake with cream cheese frosting, which I made extra of. (By the way, you can never have enough frosting... particularly when the next night you pair the extra cream cheese frosting with Coconut Cupcakes). We segued from the Coconut Cupcakes to my recipe for Sunburst Lemon Cake with White Velvet frosting. And after that, we mixed it up a bit with some multi-grain (but still cake-like) Blueberry Scones drizzled with powdered sugar icing.

All this cake is amping up my parents' exercise regimen... but when they're here, we have much to celebrate. Which reminds me:  chocolate cake can be really celebratory. But then again, so can white cake, and yellow cake, and pineapple cake, and carrot cake, and...
