An Easy-to-Use Batter-in-a-Can

I'm excited about a new product we've discovered in our household: Organic Batter Blaster, "Original Pancake & Waffle Batter." I can't really take credit for discovering it; it's become quite the rage in the neighborhood and some friends of ours provided a couple of cans that we went through ravenously and quickly. They had picked up the product at our nearby Costco, and were happy to pass on an enthusiastic recommendation for trying it out.

The batter is absolutely delicious and boasts a healthful list of nearly all organic ingredients. The batter is contained in an "aerosol" can (like the ones that you spray whipped cream out of), and can be used in a non-stick or cast-iron skillet, griddle, or even on a waffle iron. To that end, the batter can be used for both pancakes or waffles. And, since you control the "spraying," you also determine the thickness of the pancake or waffle you're preparing.

So many parents talk about loading kids' plates with a plethora of condiments to supposedly complement the food they're trying to feed their kids. (Although sometimes, they'll admit they're actually trying to hide the meal from the kids in hopes that that chicken cloaked in ranch dressing will somehow get eaten).

Frozen Peanut Butter Pie

In the throes of winter, it probably seems counterintuitive to make a really cold dessert, but this one is such fun to make with (age-appropriate) kids that I really wanted to share it. Little fingers can delight in rolling out pie dough or unwrapping peanut butter cups. True, it's not a particularly nutritious dessert, but it is delicious!
