You may have waited until now to carve your pumpkin for Halloween night (so that it doesn't get all icky and oozy). Or perhaps, you've decided to make pumpkin pie from scratch this Thanksgiving with some sugar pumpkins. Either way, a treat awaits you and your family in the form of roasted pumpkin seeds

So many people don't take advantage of this crunchy goodness, but adults -- and surprisingly, so many kids -- love snacking on them. Plus, they're a snap to make.

First, scrape out the pumpkin's "innards," the pulp and seeds inside the pumpkin. I know this can seem to be a stringy, slimy task, but inexpensive "scrapers" have been increasingly easier to find, and make the scraping go by much faster. Plus, the plastic scrapers so widely available are usually a good size for little hands and, with adult supervision, can provide a good kid activity, too.

Let's face it. Halloween is the beginning of the holiday feasting that leads to serious weight gain for many people.

Even before Halloween, I started breaking into the fun-size candy packages, taking a few to work everyday for that hunger/boredom pick-me-up, in the form of a yummy snack-sized piece of chocolate goodness. Even though Trick-or-Treat is usually the highlight of our Halloween festivities, it falls on a night other than Halloween in our city, so the actual holiday is often times overlooked. I wanted things to be a little different today, so I took our 'plain Jane' dinner menu, added some new titles to our dishes, created a cute menu to print out and a more interesting meal suddenly took the place of hot dogs and fries.

Last Friday night was the annual Halloween Boo Bash at the Cheese's school. Unfortunately, the Golfer had to be out of town that night. So that meant that I would be navigating the Boo Bash with a blue Clone Trooper and a Dragon...all by myself.
